Recipe: Green Muffins

I often have a lot of trouble eating my vegetables. They are boring and not as tasty as french fries – am I right? My son hates them and rarely eats them. When he was younger he did eat them but hasn’t since he’s turned 2!

There are some great resources now that allow us sneak our veggies in while eating tasty foods. For example, this powder is 1 full serving of veggies. Knocking off 20% of your veggies for the day in one tasteless powder.

So, I often try to sneak veggies in baked goods, smoothies, sauces and egg omelets.

Here is a great recipe to sneak in some veggies eat your muffin too!

Green Muffins

Ingredients:

  • 1 Box Kodiak Cakes Blueberry Muffin Mix
  • 1 Cup Egg Whites
  • 1 tsp Unsweetened Almond Milk
  • 4 Cups of Spinach

Directions:

Start with the spinach and egg whites. Mix them together in a blender. Then add to the kodiak cakes mix. Divide into 6 large muffin tins. Baked at 375 for about 30 minutes or until cooked all the way through.
