I love to eat good food. I love eating good food all the time. I love to cook good food. You get the point – I love food! So it’s a no brainer to me that I must cook healthy and delicious food for me and my family during the week. Some of my favorite lunches are quick and easy to meal prep and bonus, grab & go friendly! Here are a few of my favorites!
Wrap & Soup Combo
My favorite combination of food is a wrap with low sodium organic turkey breast, kale and broccoli salad, 1 slice american cheese and mustard. I put all of that on a low calorie – Flat Out Whole Grain wrap. So good! Yesterday I ate this with some yummy homemade Butternut Squash soup. You can make this mix of food with any sandwich or soup. Preferably when choosing this lunch option you want to have homemade goodies. Nothing canned or pre-packaged. Unless it is organic or whole food!
More Veggie Pasta Salad
This is one of my favorite lunches too! I like the mix of crunchy veggies with healthy chickpea pasta! Then I top it with some italian dressing and viola! A healthy on-the-go salad that is perfect for any time of day but preferably lunch because that is when my body still has time to burn off the carbs from the pasta!
Healthy Bread or Muffin & a Green Drink
Another favorite is a healthy bread or muffin. I like to have these earlier in the day so my body can burn off the carbs and fat from the bread. Gives me energy to push through the rest of my day! These one’s were delicious. My own recipe for pumpkin chocolate chip bread and apple bread. I will share them later on the blog! Mix these with a green salad to keep it fresh and lean!
Shake, shake shake!
My favorite meal for anytime of day is my daily shake. It is packed with vitamins and nutrients to keep me energized and feeling good all day long. My go to recipe is always 1 cup spinach, 1 cup mixed berries and 1 cup unsweetened almond milk blended with Vanilla Vegan. Check out where to get my shakes here! They are on sale right now! YAY!
EVERYTHING Avocado Toast with Egg
The most delicious lunch – really it is. Combine 1 whole grain piece of bread with 1/4 avocado sliced, cook up two eggs to put on top of the avocado (not pictured) and sprinkle with Everything but the bagel seasoning. I mean this is SO good. Definitely great to fill your hungry belly but it’s so good you will probably want a second piece. Opt for a piece of fruit with this one!
Chicken Sausage & Veggies
A yummy and satisfying lunch – chicken sausage and 1 (or as many as you’d like) cup of green veggies. This is sooo good and filling. Fueled with lean protein from the chicken sasuage and nutrients from the green veggies this is a no brainer for a hot quick lunch that is easily meal-preppable! 🙂
I hope this gives you some new ideas on healthy and quick lunches! You can always keep these items in your fridge for quick on-the-go lunches during the weekend! There is NO shame in packing up your lunch to bring to whatever outing you’re going to – YOU GOT GOALS GIRL!
