The other night after dinner I came up with a quick + easy recipe for healthy waffles for my son. He has a tough time with breakfast – well any meal really. My aunt says the different textures are tough for kids. So in my effort to give him healthy food that is ONE texture to ease him further into eating solids – I came up with this quick recipe for protein waffles using Daily Sunshine protein powder (organic + kid safe).
QUICK+EASY PROTEIN WAFFLES [FOR THE LITTLE ONES IN OUR LIVES]:
- 1 Banana
- 2 TBSP Almond Milk
- 2 Eggs
- 1 Packet Daily Sunshine
- 1 Tsp Chia Seeds
- 1/4 Cup Unbleached Flour
- Mash Banana in a bowl with almond milk & eggs.
- Mix in the Daily Sunshine, chia seeds, & flour.
- Mix until smooth.
- Spray Waffle iron (can be pancakes too) and pour batter in.
- Let cook for 4 mins (or until waffle iron cooks to your liking).
- Serve with 1 tsp. Maple Syrup
Liam enjoyed his waffle this morning with some grapes too. This recipe is super versatile. You can make it into muffins or pancakes as well!
